DIY | COCONUT VANILLA GRANOLA AND FRUIT PARFAIT

If you follow me on Instagram, you have peeked into my love affair with good food. A couple weeks ago, I hung out with fellow bloggers and food lovers Chanelle of The Penelope Times and Jenny of Good, Bad, and Fab for a fun and delicious DIY Brunch. Each of us cooked a lil something in Jenny's beautiful kitchen and shared it with each other.  I made Coconut Vanilla Granola and a Fruit Parfait (full tutorial after the break). Stay tuned for the other recipes!

Coconut Vanilla Granola

Ingredients:
  • 2 cups old fashioned oats (NOT quick oats)
  • ¾ cup walnuts, chopped
  • ¾ shredded sweetened coconut
  • ½ cup sliced almonds
  • 2 tbsp. dark brown sugar
  • 1 tsp. cinnamon
  • ¼ tsp. ground nutmeg
  • ¼ tsp. salt
  • 4 tbsp. coconut oil, melted
  • ½ cup pure maple syrup
  • 1½ tsp. vanilla extract 1 tsp. vanilla paste

Parfait

Ingredients:
  • Fruit
  • Greek Yogurt
  • Coconut Vanilla Granola (recipe above)
  • Agave or Honey
Instructions: Select your favorite fruit (I used a variety of berries and bananas).  Then, layer Greek yogurt, fruit and granola in a mason jar.   Top off with a drizzle of honey or agave.
